A distinctive processed lot: juicy peach-like fruit with ginger and cardamom spice layered over it. As the cup cools it turns herbal, and the texture stays smooth and syrupy throughout. The character comes out of several stages of fermentation followed by careful low-temperature drying — complex, and unlike anything else on the shelf.
