Our specialty coffee shop opened in Minami-cho, Mito, Ibaraki, roasting to a standard we want to hold up anywhere.

Since we opened in October 2023, we have roasted top specialty coffee under the guidance of Yasuo Ishii of LEAVES COFFEE in Kuramae, Tokyo, from the roast through to the brew.

We try to draw out what the bean itself has to give: body, and a cup that stays clear all the way through. That is what we mean by the Hitachino taste.
