From Ibaraki to the world

HITACHINO COFFEE is a specialty coffee shop
that opened in 2023.

We roast carefully, to draw out as much
of each origin as the bean will give,
for a cup that is sweet, fruity and easy to drink.

We take on what the producer intended,
try to express that quality as fully as we can,
and pass on what coffee can be
as something you experience.

Roasting

To draw out as much of each origin as we can, we roast batch by batch, watching the bean as it goes. The machine is a German PROBAT 12kg built in the 1980s. Its thick drum carries heat slowly, which is where the fruit and the sweetness come from.

Cupping

Every roast is brewed with the equipment and the water we use in the shop, and tasted on the cupping table. The differences between origin, farm and process show up in the cup as they are.

Hand drip

Each cup is brewed by hand, with a method chosen for the bean. Water temperature and grind are set per coffee, so the sweetness and the aroma reach the cup as they should.

Specialty coffee, roasted here

We choose by origin, farm and variety, and roast in our own roastery, for a cup that shows what the bean has. In the shops and online we keep to light roasts.

A room built on a Japanese sense of things

The vessels, the way of working, the thinking behind it. We build on Japanese craft and manners to make a place where coffee can be met differently, and we do it from Ibaraki.

A clear line back to the producer

We take on what the farmer intended and try to express that quality as fully as we can, and we pass on the story that came with the cup.

Ceramics

Sellen Pottery

They make the mugs and plates we serve on. Each piece is finished by hand, and we choose them thinking about how they sit with the coffee.

Ceramics — Kasama ware

Kai Kono

Plates by Kai Kono, a potter working in Kasama ware, are also in use in the shops. They keep the texture of the Kasama clay, and there is a warmth to them.

Ceramics — Mashiko ware

Aki Ito

The glasses our iced drinks come in are the work of Aki Ito, a Mashiko ware potter.

Woodwork — Shirosato, Ibaraki

Kato Woodworks

They make the wooden trays we use, including the coffee trays. They have the presence that wood has, and they carry the day's cups.

Matcha and hojicha — Bando, Ibaraki

Nemotoen

Our matcha and hojicha come from Nemotoen in Bando, Ibaraki. The tea is grown with care, and we put its aroma on the menu as it is.

Herbs — Koga, Ibaraki

Akiba Farm

They supply our herbs and work with us on our own blends. The aroma of herbs grown properly in a field comes through in the cup.

Fermented plum syrup — Mito, Ibaraki

Nemoto Tsukemono

We use the fermented plum syrup made by Nemoto Tsukemono in Mito for our plum drinks.

Bean paste — Tokyo

Naito Seian

Naito Seian, a long-established anko maker in Tokyo, makes an original bean paste for us using our coffee. It goes into the coffee anko monaka, sold only at ROASTERY.

A wide, warm room on the first floor, where the bakeshop and the cafe are one. There are gluten-free things among the baking.

Questions we are often asked

ROASTERY (Minami-cho, Mito) Payment: cashless only

Is there a car park?

There is no car park of our own, but there are several coin car parks nearby. It is about seven minutes on foot from Mito Station.

What are your opening hours?

10:00 to 18:00 on weekdays, and 8:00 to 18:00 at weekends and on public holidays. Unscheduled closures are posted on Instagram (@hitachino_roastery).

Can I reserve a table?

No reservation is needed. Please just come in.

Which payment methods do you take?

Cashless payment only. Credit cards, Japanese transport IC cards, iD, QUICPay and QR code payments are all accepted.

Can I buy coffee beans on their own?

Yes. We sell roasted beans by weight and drip bags over the counter, and the same coffee is in our online store.

What kind of coffee can I drink there?

Mostly light roast specialty coffee that we roast ourselves, served as single origin hand drip. We roast on a PROBAT built in the 1980s.

Do you supply cafes and restaurants?

Yes, we sell wholesale to cafes and restaurants, from 1kg, with free samples. Please see the wholesale page.

Is there a car park?

Yes, you can use the car park of the building.

What are your opening hours?

10:00 to 18:00, with no fixed closing day. Unscheduled closures are posted on Instagram (@hitachino_sideb).

Do I need to book for lunch?

You are welcome without a booking. If you would rather have a table held, you can reserve a lunch seat (Japanese page). The lunch menu changes with the season, and the current one is on Instagram (@hitachino_sideb).

Can I buy baked goods to take away?

Yes. SIDE B is a bakeshop as well as a cafe, so takeaway is welcome whether or not you sit in.

Do you have gluten-free options?

We bake several things without wheat flour. What is available changes through the year, so please ask the staff at the counter.

Which payment methods do you take?

Both cash and cashless payment.

Do you hold events or workshops?

We hold workshops and events regularly. They are announced on Instagram and on our LINE official account, and booked through a dedicated reservation page.

Do you ship overseas?

Yes. Our online store ships roasted beans and drip bags from Japan to most countries, by EMS. Shipping is calculated by weight at checkout. Some items are for delivery within Japan only, and those are not shown when you are shopping from outside Japan.

Looking for coffee in Mito

HITACHINO COFFEE is a specialty coffee roaster with two shops in Mito, Ibaraki. ROASTERY, on the main road in Minami-cho about seven minutes on foot from JR Mito Station, has a German PROBAT roaster from the 1980s in the room. You can watch the roasting from a fully open counter while a single origin is brewed by hand. Hours are 10:00 to 18:00 on weekdays and 8:00 to 18:00 at weekends and on public holidays, so it is open from eight in the morning at the weekend. There is no car park of our own, but there are several coin car parks nearby.

SIDE B, in Ishikawa, is a cafe with a bakeshop on the first floor of SIDE B MARKET. The building has a car park, so it is easy to stop at while driving around Mito. There are gluten-free baked goods and a lunch menu, and hours are 10:00 to 18:00 with no fixed closing day. No booking is needed.

If you are looking for coffee beans to take away, we sell roasted beans by weight and drip bags over the counter. What we carry is mostly light roast specialty coffee, roasted so that the differences between origin, farm and process show up in the cup. If you are not sure what to pick, tell the staff what you usually drink.

For home there is a coffee subscription, and for cafes, restaurants and hotels we sell wholesale coffee from Japan. Beans and drip bags from the online store ship from Mito to most countries.
