Castillo was developed in 2005 by Cenicafe, the research centre of Colombia's national coffee federation. It is a leaf-rust-resistant Arabica and one of the country's principal varieties, known for a clean, bright acidity and good balance in the cup.

Tolima sits in the central Andes of Colombia, a fertile region built around the valley of the Cauca river. Elevations range from 500 to 2,800 metres, giving the varied terrain that coffee does well in. The climate is warm and humid with steady rainfall through the year, and the local microclimates suit the growth and development of the cherry particularly well.

Coffee from Tolima is known for depth of flavour and balanced acidity.

This lot has the juicy sweetness of green apple and white peach alongside a clean, bright acidity — the variety and the region both come through, and the cup is very well balanced. As it cools, a fresh lemongrass note opens up.

The producers work by trial and error refined over years, and their lots are consistently solid. They have contributed a great deal to the reputation and development of coffee growing in Gaitania. Their farm is not simply a place where coffee is produced; it stands for their commitment to the craft and the science of growing it.
