The 2023 World Barista Champion, Boran Um's family runs Um Farm.
Introducing a very balanced and clean coffee.

Founded by Borão's father, Stefano, the farm not only grows traditional Brazilian varieties, but also focuses on exotic varieties and special fermentation and drying processes, demonstrating the farm's strong passion and commitment to coffee production.

All of their coffee beans are harvested by hand, and while mechanical drying is becoming more common, they remain committed to 100% sun-drying.

While the usual drying process takes 15 to 30 days, this is done slowly over a period of 30 to 45 days, which seems to create a unique sweetness and flavor.

At HITACHINO COFFEE, we do cupping after roasting.
I could sense the sweet and sour citrus taste, starting with the vibrant orange.
Towards the end it has a chocolate-like sweetness and bitterness.
It is a natural coffee with a refreshing taste.
