What Japanese coffee means

Coffee reached Japan through the kissaten, the coffee houses that grew up here through the twentieth century around a single cup brewed slowly. That history is why coffee is made the way it is in Japan.

01

Brewed by hand

Pour-over is the default here rather than an alternative. Beans are roasted to be read by water, temperature and time, not by pressure, which changes what a roaster is aiming for in the cup.

02

The vessel is part of the drink

The cup, the temperature it is served at and the order of movements behind the counter are treated as part of the taste rather than as presentation around it.

03

Light roasting to show the lot

Light roasting is used to keep the acidity and sweetness of a particular farm and lot legible. Our single origins are roasted this way, which is why we offer them light only.

04

One roastery, one standard

We roast on a PROBAT drum roaster built in the 1980s and run two shops, ROASTERY and SIDE B. Wholesale coffee comes out of the same batches we pour for our own guests.

Light roasted Japanese specialty coffee beans from HITACHINO COFFEE

We work out the roast with you

Tell us your brewing equipment, your menu and who drinks it, and we will suggest origins and roast levels around that. We can cup together as we narrow it down, so the choice is made on taste rather than on a description.

What you can buy

From green-to-roasted beans through to finished drink bases, and production under your own brand.

Ordering from outside Japan

The conditions below are the ones worth knowing before you write to us. Everything else we work out together.

No fixed minimum

We do not set a minimum order for export. Beans are sold in 1kg units and you can combine as many origins as you like. International airmail is charged in weight brackets, so a consolidated order lowers the cost per kilogram considerably, and we will happily work out an efficient size with you rather than leave you to guess at it.

Where we ship

Most of Asia, Europe, Oceania, Canada and the Middle East. The United States is not available at the moment, because goods posted from Japan now require customs charges to be settled in advance through a certified provider, and we are not set up for that yet. If your country is not listed, please ask and we will check it for you.

Air only, roasted to order

We roast on a weekly cycle after an order is placed rather than roasting to stock, and international orders go by air. We do not ship coffee by sea. The time involved works against a light roast, and it is not what we would want you to serve.

Duties and taxes

You are the importer of record, and import duties, VAT and customs clearance in your country are on your side. Prices are quoted tax-free for export, so Japanese consumption tax is not added to what you pay us.

Prices and payment

Prices are quoted individually by origin, quantity and how often you order, with shipping quoted separately at cost. Payment terms are agreed case by case. Tell us the shape of order you have in mind and we will send real figures rather than a range.

Samples

Tasting samples of the beans are free. For addresses outside Japan we ask you to cover the international postage, which keeps the samples going to people who genuinely want to taste them.

Questions we are asked

What is your minimum order for export?

We do not set a fixed minimum for export. Beans are sold in 1kg units and you can combine as many origins as you like. Because international airmail is charged in weight brackets, a consolidated order lowers the shipping cost per kilogram considerably, so we will work out an efficient size together once we know what you are looking for.

Which countries do you ship to?

We currently ship to most of Asia, Europe, Oceania, Canada and the Middle East. The United States is not available at this time because of the customs pre-payment procedure now required on goods posted from Japan. If you are elsewhere, please ask and we will check.

Who pays import duties and taxes?

Import duties, VAT and any customs clearance in your country are the buyer's responsibility, and you are the importer of record. Our prices are quoted tax-free for export, so Japanese consumption tax is not added.

Can I try the coffee before ordering?

Yes. Tasting samples of the beans are free. For addresses outside Japan we ask you to cover the international postage.

Can I choose the roast level?

Our single origins are light roasted only, which is how we serve them in our own shops. Custom blends are roasted to order and can be built anywhere from light to dark, including darker profiles for espresso and milk drinks.

How fresh will the coffee be?

We roast to order on a weekly cycle rather than roasting to stock, and international orders are dispatched by air. We do not ship coffee by sea, because the time involved works against a light roast.

Do you produce private label or OEM products?

Yes. We produce drip bags, latte base and Nespresso-compatible capsules under your own brand, with your packaging and logo. Each item has a minimum production quantity, and split delivery is available so you can start at a manageable size.

How are prices set?

Individually, by origin, quantity and how often you order. Export prices are quoted tax-free and shipping is quoted separately at cost. Please write to us and we will send figures for the shape of order you have in mind.

Can we talk before our shop opens?

You are welcome to. We are happy to help with choosing origins and roast levels around your equipment and menu while you are still planning.

Do you supply businesses inside Japan?

Yes, and most of our wholesale customers are here. If you are based in Japan, the Japanese page has the domestic conditions.

Sourcing Japanese coffee for your business

HITACHINO COFFEE is a specialty coffee roastery in Mito, Ibaraki, roughly 100km north-east of Tokyo, running two shops: ROASTERY, built around the roaster itself, and SIDE B, a bake shop and cafe. We supply the same coffee we serve there to cafes, restaurants, hotels, roasters and retailers, in Japan and abroad.

When people look for Japanese coffee beans wholesale, what they are usually after is not a country of origin, because Japan grows almost no coffee. What they are after is a way of roasting and serving it. Japanese coffee culture came out of the kissaten and out of pour-over brewing, and it favours light roasting that leaves a single farm and lot readable in the cup. That is the tradition we work in, and it is why our single origins are light roasted only.

For wholesale we sell beans in 1kg units that you can combine freely across origins, so a first order can carry several coffees rather than committing you to one. Custom blends are roasted to order from light through to dark, including profiles built for espresso and milk drinks. Alongside the beans we supply drip bags and latte base, identical to the products in our own shops, and we produce drip bags, latte base and Nespresso-compatible capsules as OEM private label under your own brand.

Export orders ship by air to most of Asia, Europe, Oceania, Canada and the Middle East. We do not ship coffee by sea, because the time involved undoes what a light roast is for. Prices are quoted tax-free for export and individually by origin, quantity and frequency; import duties and taxes in your country are the buyer's responsibility. The United States is not available at the moment, owing to the customs pre-payment procedure now required on goods posted from Japan.

If you are importing Japanese coffee for the first time, or you are still planning the shop it will go into, write to us and we will send tasting samples. The beans are free and we ask only that you cover the international postage. For more about the roastery and the two shops, see our brand page, or the Japanese wholesale page if you are based in Japan.
